Sausage & Corn Soup
Servings: 10-12
Ingredients
- 2 lbs. cooked Italian sausage, sliced
- 4 cups whole kernel corn
- 1 cup chopped onion (1/2 medium onion or 1 small onion)
- 1 cup chopped green peppers (1 bell pepper)
- 2 cups chopped tomatoes (6 Roma tomatoes)
- 4 tbs. butter
- 8 oz. tomato sauce
- 4 cups chicken broth
- 1 tsp basil (fresh or dried)
- 1 tsp oregano (fresh or dried)
- 1/2 tsp. cayenne pepper or chili powder is a good substitute
- 4 tbsp Colgin Apple Liquid Smoke
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1/2 tsp red chili flakes (omit if you do not want it spicy)
- salt and pepper to taste
Instructions
1. Heat up a medium to large pot to medium high heat
2. Add in butter
3. Once butter is melted, add in your onions and peppers and sauté for about 3-4 minutes
4. Add in the remaining ingredients
5. Crank the heat up to high and bring everything to a boil
6. Turn the heat down to low and simmer for 1-2 hours
