Sausage & Corn Soup

Servings: 10-12

Ingredients

  • 2 lbs. cooked Italian sausage, sliced
  • 4 cups whole kernel corn
  • 1 cup chopped onion (1/2 medium onion or 1 small onion)
  • 1 cup chopped green peppers (1 bell pepper)
  • 2 cups chopped tomatoes (6 Roma tomatoes)
  • 4 tbs. butter
  • 8 oz. tomato sauce
  • 4 cups chicken broth
  • 1 tsp basil (fresh or dried)
  • 1 tsp oregano (fresh or dried)
  • 1/2 tsp. cayenne pepper or chili powder is a good substitute
  • 4 tbsp Colgin Apple Liquid Smoke
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tsp red chili flakes (omit if you do not want it spicy)
  • salt and pepper to taste

Instructions

1. Heat up a medium to large pot to medium high heat

2. Add in butter

3. Once butter is melted, add in your onions and peppers and sauté for about 3-4 minutes 

4. Add in the remaining ingredients

5. Crank the heat up to high and bring everything to a boil

6. Turn the heat down to low and simmer for 1-2 hours
