More Baked Beans

  • 3 (16o.z) cans of baked beans
  • 6 to 7 slices bacon, partly cooked and divided (optional)
  • 2 to 3 oz. fully cooked ham, cut into 1/2 inch cubes or pieces (optional)
  • 2 to 3 inches of cotto beef salami, cut into bite size pieces (optional)
  • ¾ cup chopped peeled onion
  • ½ cup tomato chili sauce
  • ½ cup light brown sugar, firmly packed
  • 1/3 cup light molasses
  • 1/3 cup maple syrup
  • ½ of prepared (yellow) mustard
  • ½ teaspoon of chopped peeled garlic
  • 8 to 10 drops of hot sauce
  • 8 to 10 drops of COLGIN HICKORY LIQUID SMOKE


Drain off any excess liquid from beans. With kitchen shears, cut three slices partly cooked bacon (almost cooked but not crisp). In a large bowl, combine beans, bacon pieces and remaining ingrediets mixing well. Spoon into a 2 quart casserole or baking dish or bean pot. Arrange remaing partly cooked bacon slices over beans, bake, uncovered in 275F oven for about 3 ½ to 4 hours or until bean mixture is thick and brown in color. Serve hot or at room temperature. Beans may be wrapped in heavy duty aluminum foil and frozen if desired.
